A saucy secret....

If like me you spend your days trying to pack as many vegetables in to your toddler, then this recipie is for you. Its packed with vegetables and they dont even know they are eating them, its also really versitile, it can be used alone stirred in to pasta, as a sauce for pizza, or as a base for bolognese or chilli.

I've pretty much made this recipie up, so feel free to freestyle with it. I use :

2 peppers (any colour)
1 onion  (red or white, doesn't matter)
1 large courgette, or 2 small ones
1 regular sized aubergine
2 garlic cloves
1 tin of chopped tomatoes
1 carton of passata
a good squeeze of tomato paste, i reckon about a tablespoon

Simply dice all the veg (the smaller you dice the quicker it cooks) and sweat it down in a bit of butter or oil, probably a good tablespoon full, i usually do it on a medium to low heat with the lid on, can take up to twenty minutes, you cant really over cook it as its going to be all blended anyway. When the veg is soft add the chopped tomatoes, tomato paste and the passata and just let it simmer away until the watteryness has gone off the top. Then put it in a blender and presto! This makes a ton of the stuff so i just divide it up and freeze it.
I just stir it through Pasta and grate a ton of cheese in to it for Martha's lunch. She loves it. I do recommend feeding them naked tho....cos, well.... you know...
